Healthy Halloween Party Snacks!

Halloween is an amazingly fun time for kids. Every Fall, they get to dress up, stay up late, and (of course) get lots of candy. It’s not exactly the healthiest of holidays, but it sure is a fantastic one.

That said, if you’re putting together a party, it never hurts to include some healthy and tasty options. Here are three tasty, non-sugary snacks:

Witchy Cheesy Broomsticks

These treats won’t be flying about the night sky, but they will fly right off the plate!

Ingredients
– Pretzel Sticks
– String Cheese Sticks
– Chives (Optional)

Let’s Get Cooking
– Step 1 –
Cut the string cheese sticks into thirds.

– Step 2 –
Make a series of slices into the end of cheese stick, going about two-thirds up its length. You want to fray the end of the cheese so that it looks like the bristles of a broom.

– Step 3 –
Stick the pretzel stick into the un-sliced end of the cheese stick. Don’t push it in too far or the cheese stick will fall apart.

– Step 4 –
If you’re going the extra mile, tie a skinny chive around the top of the cheese stick and snip off the excess chive. This simple over-under loop is all you need to make the chive look like the binding on a broomstick.

 

Deviled Pumpkin Eggs!

This is a simple Halloween twist on an old party favorite.

Ingredients
– Dijon Mustard (3 Tbsp.)
– Mayonnaise (1/4 Cup)
– Hard-Boiled Eggs (6)
– Paprika
– Salt
– Pepper
– Chives (Finely Chopped)

Let’s Get Cooking
– Step 1 –
Peel the hard-boiled eggs, cut them lengthwise, and scoop the yolks into a mixing bowl. Set the sliced egg halves onto a tray.

– Step 2 –
Add the mayo, mustard, and 1 teaspoon of paprika into the bowl. Mix it all up and salt and pepper to taste. If the mixture is looking more yellow than orange, add a bit more paprika.

– Step 3 –
Put the yolk mix into a piping bag and fill the empty spot in the egg whites.

– Step 4 –
Grab the paprika and sprinkle it on the eggs for a bit of color and flavor

– Step 5 –
Take a small length of chive and stick it into the egg yolk mixture to make a perfect little pumpkin stem.

Stuffed Jack-O-Peppers!

This is more of an entrée than a snack, but it’s a perfect way to fuel up your trick-or-treaters before their big night on the town.

Ingredients
– Large Orange Bell Peppers (4)
– Rice (1 Cup Cooked, White or Brown)
– Lean Ground Beef (1 Pound)
– Medium Yellow Onion (1)
– Mushrooms (8 oz.)
– Roasted Red Pepper Sauce (2 Cups)
– Avocado or Other Cooking Oil
– Dried Italian Seasoning (1 Tsp.)
– Red Pepper Flakes (1/4 Tsp.)
– Salt
– Pepper

Let’s Get Cooking
– Step 1 –
Cut the tops off the peppers, remove the seeds and pith, and (if necessary) slice a little off the bottom of the pepper so that they stand up. Carve a jack-o-lantern face in each one, rinse them, and pat them dry.

– Step 2 –
Cook the rice using the instructions on the bag.

– Step 3 –
As the rice is cooking, grab a small sheet pan and lightly grease it. Pop the peppers and the pepper tops onto the sheet and cook them at 350º F for 20-25 minutes. You want them cooked but still firm to the touch.

– Step 4 –
Finely dice up your onion and chop up your mushrooms.

– Step 5 –
Break out a large skillet, add about a tablespoon of your avocado or other oil, turn the burner to medium, and sauté the mushrooms and onions. You want them going for 3-4 minutes (or until the mushrooms have given up some of their water and are soft). Then, turn the burner to medium high and add the ground beef and the Italian seasoning. Cook until no pink remains.

– Step 6 –
Drain any grease from the pan, bring the heat back down to medium-low, and pour in the roasted red pepper sauce and the rice. Stir that all together and cook for 2-3 minutes (or until it’s all warmed through). Add red pepper, salt, and pepper to taste.

– Step 7 –
Fill each pepper with about 1 cup of the mixture, put the tops back on, and serve!
